Pan con tomate is so simple, it barely deserves a recipe. But, if you've never tried this beautifully simple breakfast, you must! I like to grate the tomatoes like my Abuela does, as you get more tomato than rubbing it on the bread.

Serves 4 for breakfast

1 kilo of tomatoes

2 cloves of garlic, halved

100ml extra virgin olive oil

1 large French stick

Salt and pepper

Spanish ham

Slice the French stick in half lengthways, the slice in pieces about 8cm long. Toast the bread. Once toasted, rub with the garlic.

​

Meanwhile, halve the tomatoes and grate into a large bowl, leaving the skins. Add the olive oil, and season generously with salt and pepper. 

​

Spoon the tomatoes over the toast and top with Spanish ham.
