Gambas pil pil is a classic tapas dish found all over Spain. With only a few simple ingredients, it's easy and quick to make.
gambas pil pil
serves 4 as a tapa
80ml extra virgin olive oil
4 large garlic cloves
4 small cayenne peppers
400g peeled king prawns
Splash of dry sherry
Sea salt
Finely slice the garlic. Heat the olive oil in a heavy based frying pan over a medium heat. Once hot, add the garlic and cayenne peppers, and fry gently until softened.
Increase the heat and add the prawns, frying for 3 minutes until pink and cooked through. Add the sherry and heat until it bubbles.
Season with sea salt and serve with crusty bread.
